A beginners guide on roasting

Introduction

Upon unlocking your headquarters, you’ll find multiple rooms.

To the right, there is a box room.

A roasting machine is available in this room after you complete a mission within the 4th store.

At the beginning, you will only have access coffee beans of very low quality.

And you will gradually unlock greater quality and more variety from different continents.

Each of the four continents has its own coffee varieties and specific coffee flavors (flavors).

You will have to roast North American coffee beans if you want a cup of coffee with a whiskey-like flavor. Coffees made from beans from other continents are not allowed to have this particular whiskey taste.

To begin, select the roasting oven :

– Learn more about the challenges you face, such “roast coffees from Asia 20x”

– Next, choose “create roasting profile”, at the bottom right

Here’s a list with information about beans: variety, continent, process and possible notes

– Choose from your beans available, for this challenge you’ll need Asian bean

– Finally, pick the best roast employee

Employers with better employees will get a higher final score. But, be aware that an employee with lower roasting scores won’t have the ability to use beans roasted from an employee with higher scores.

The roasting device : curbs & cracks

This is the final step to your beautiful roasting machine.

Once you click the green button, the blue curb will start to reduce.

It’s your current temperature, and it will continue to decrease until it reaches at least 195deg.

The temperature will slowly rise as you click on the red button “ignition”. If you click the ignition button sooner, it will increase quicker. But there is a delay.

You’ll only need to use 2 buttons at this stage:

Reduce heat/increase heat, to alter the heat between 1-4 flames

i.e. The temperature of a blue curb will rise more rapidly than others.

The green curb shows the rate of growth.

The orange curb indicates heat level (1-4 flames).

Beans reach first crack and second crack.

The faster you increase your rate, the faster you will crack the first crack.

If you need to reach 1st cracked after 7min40 you will need to maintain a low heat to ensure that the temperature at the blue curb does not reach 360deg (first crack temperature). This is because it takes 7min40 to reach 1st crack.

Your beans will eventually reach multiple roasting levels once you reach first crack. If you continue to heat the beans, they will quickly become burnt.

The notes in the blue zone

You can get as many as 3 notes for your beans. The image below shows the bottom right:

407° malt
376° mapple syrup

That is when the blue curb will reach 8min56sec (time) on the horizontal axis.

You can get a card for your beans:

– A mapple syrup note of between 376deg & a little less than 407degc

– A malty note between 407degc & a bit below 438degc

– A brown-roast note within the range of 438degc and below?? ?degc

If you continue to exceed brown-roast or don’t reach maple syrup requirements in the appropriate time, you’ll end up with a bad note (a disgusting smell).

At 8min56sec, a blue rectangle will appear.

– The current temperature of your beans is displayed at left

The number of points you get for a note is dependent on how long it takes to obtain it.

If you want a malty note, then the circle at top shows how much time is left to reach 391degc.

If you want to make a mapple syrup note then wait for the square left of the name, fill it in green, and keep the temperature low to avoid reaching 391deg.

If you reach 407deg you’ll no longer get mapple syrup note, you’ll get malt.

Once you reach 438 degrees Celsius, you will no longer get malt. Instead, brown-roast will be your new favorite flavor.

Do you see the little green square marking on the vertical thermometer?

The heat will rise slower if it is lowered. The heat will rise much faster if you raise it. There is a delay. The little green circle will slow down even if the heat is reduced to 1 flame. This is the rate of increase, more or less quickly.

3 notes are needed for your beans, if your challenge is not on a bad note

1st note – Ashy, tobacco, or apple

2nd note: Mola*ses (or peanuts) or honey

3rd note: Brown-roast and malt syrups

If the temperature of the blue curb is not attained at the beginning time, the roasts will take a disgusting note.

Do certain notes go together better? Currently, i don’t think so. It’s just that some challenges require certain notes and…your personal taste. Apple, honey and mapple syrup… Yum!

The tasting note at the left is dependent on the note and how long it took to reach. A higher quality bean will give you a better tasting note. The final score takes into account the roast (light/medium/dark), as well as the quality of the beans.

A skillfull employee

Chris Hotard has 491 roasting point. He is level 8.

To find a great roast employee, you can hire a low-level worker and train him/her up in roasting skills to level 6 (max).

If you have the money to interview a roaster for your company, then you can use maximum recruitment budget. If you have the resources, you can hire an employee higher than level 6. Chris is an example of this. He was directly recruited, which is why he’s at level 8.

Automation

To get a coffee that is 95 rated, you need 95 rated beans. This means that the coffee shop must have at least the roasting score from the employee who roasted them in your headquarters. Finally, brewed by a barista using a machine at least 95 rating to ensure the beans are not spoilt.

But, you can’t automate beans roasting at your HQ. Instead, you have to roast them yourself :

1. First possibility: Supply automation switched on and manual fermentation

Level 4 with barista skills allows you to automate the brewing by using the freshest beans. If your barista isn’t interested in using your best beans, cancel the automation. Instead, brew your best beans by yourself. If you automate supply and roasting, then the barista will most likely use the 80 rate resupplied coffee beans.

2nd possibility: Supply automation turned off. Automated brewing
